Carla and I first tried ultra-fluffy Japanese soufflé pancakes in 2017. We were in Tokyo and saw people waiting in line outside a cafe called Flipper’s. It was about nine at night and we’d already eaten dinner, but we decided to take a look at the menu anyway. The menu had photos of the thickest pancakes we ever saw. We decided they’d be a good dessert, so we got in line. We were seated in about 20 minutes and we ordered one plate of pancakes with whipped cream and another with whipped cream and strawberries. We loved the creaminess and delicate flavor.
Mark: Do you have a collection, somewhere, of your suggestions and guides for visitors to Japan? My niece and a friend have vague plans of going there next year or maybe 2023.
Re the t-shirts: what's the mystery, Mark? They say "the Magnet" right on the guy's shirt. And I look forward to mine arriving in heather grey -- thanks!

Fun! Will have to try these soon. They look at least a little similar to Eierkuchen--German egg cakes. All the photos of Eierkuchen I could find online are of depressingly flat pancakes, almost crepe like. Boo. But my mom makes them super light and fluffy, 1/2 to 3/4 of an inch thick. Super simple, and delicious. Here's the recipe:
DIRECTIONS: Separate egg whites and yolks. Yolks will go with the flour and milk, so choose appropriately-sized bowls. Mix yolks, flour, milk, and salt. Whip egg whites until stiff and then fold in. Fry in a pan (2 at a time) in butter until golden brown on medium-ish heat so they fully cook. Should be light and fluffy, about a half-inch thick (don't mash them down with the spatula!). Sprinkle with a little sugar and enjoy! Makes 6 or 7.
