Mark: Do you have a collection, somewhere, of your suggestions and guides for visitors to Japan? My niece and a friend have vague plans of going there next year or maybe 2023.

Fun! Will have to try these soon. They look at least a little similar to Eierkuchen--German egg cakes. All the photos of Eierkuchen I could find online are of depressingly flat pancakes, almost crepe like. Boo. But my mom makes them super light and fluffy, 1/2 to 3/4 of an inch thick. Super simple, and delicious. Here's the recipe:

INGREDIENTS: 3 eggs, 3 tbsp flour, 3 tbsp milk, pinch salt.

DIRECTIONS: Separate egg whites and yolks. Yolks will go with the flour and milk, so choose appropriately-sized bowls. Mix yolks, flour, milk, and salt. Whip egg whites until stiff and then fold in. Fry in a pan (2 at a time) in butter until golden brown on medium-ish heat so they fully cook. Should be light and fluffy, about a half-inch thick (don't mash them down with the spatula!). Sprinkle with a little sugar and enjoy! Makes 6 or 7.

Thanks for this! I just watched the whole video. It looks like the secret ingredient is egg white powder, and the trick is to bake them in an oven, not fry them in a pan.
